What is the "Honey Process"?

The honey process is a semi-washed method where ripe coffee cherries are depulped, removing the skin and most of the fruit flesh while retaining the sticky mucilage layer (which resembles honey, hence the name). The beans are then sun-dried on raised beds, allowing the natural sugars to caramelize, creating a rich, sweet flavor profile.

Different honey variations exist based on the amount of mucilage left and drying time:

White Honey – Minimal mucilage, lighter body
Red Honey – Moderate mucilage, balanced sweetness
Black Honey – Maximum mucilage, deep, syrupy texture
