What is the "Honey Process"?
In the honey processing method, freshly harvested ripe coffee cherries have their skin and pulp removed, leaving only the parchment layer intact. The beans are then sun-dried on raised beds. As they dry, the sticky mucilage turns into a golden hue, resembling honey—hence the name. Depending on the variety and ripeness level, different honey processes are classified into White Honey, Red Honey, and Black Honey. This method enhances sweetness and body, producing a rich and well-balanced cup.
